Prep Time: 10 minutes | Cook Time: 15 minutes | About 478 kcal per serving

8 ounces of your favourite pasta (penne, spaghetti, farfalle, linguine - whatever you prefer) ½ cup of basil pesto 1 pound of asparagus (trimmed) 2 tablespoons of olive oil ⅓ cup of (sun dried) tomatoes. If you choose sun dried tomatoes, we recommend the ones in olive oil ⅓ cup diced mozzarella cubes Salt and pepper (freshly grounded) as desired Yield: 4 servings​

Preheat oven to 425 degrees F (or 215 degrees celsius). Lightly oil a baking sheet. Cook pasta according to package instructions in a large pot of boiling, hot water. Place asparagus in single layers onto prepared baking sheet. Drizzle with olive oil (add salt & pepper as desired for taste). Place in oven and roast for 8-12 minutes. Let cool before cutting into 1-inch pieces. Combine pasta, pesto, (sun dried) tomatoes, asparagus and mozzarella in a large bowl and serve immediately. Tip: if desired, you can add a fried egg or chicken to the pasta
