Carrot Cake

6 egg whites 1 cup of applesauce 1 can of crushed pineapple with juice (ca. 8 ounce) ½ cup of chopped walnuts 2 cups of shredded carrots ½ cup of skim milk 1 cup of whole wheat flour 2 teaspoons of baking soda 1 tablespoon of ground cinnamon 1 ½ teaspoons of vanilla extract ½ teaspoon of ground nutmeg ¼ teaspoon of ground cloves 1 ⅓ cups of white sugar ½ cup of raisins if desired ​

Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Lightly grease a large baking pan with low-fat butter or non-fat cooking spray. Beat egg whites in large bowl and slowly beat in sugar, the apple sauce, skim milk and vanilla. Stir in cloves, nutmeg, cinnamon, baking soda and flour. Then, stir in one at a time pineapple (with juice), carrots, walnuts and, if desired, raisins. Pour mass into the prepared pan. Bake for 35-40 minutes in the preheated oven. Use a toothpick to test if done - if it comes out clean, it is done. Tip: goes well with fruit salad.
