Banana Oat Muffins

Prep Time: 15 minutes | Cook Time: 20 minutes | About 144 kcal per muffin 

Ingredients:

  • 1 cup mashed bananas

  • 1 egg 

  • ⅔ cup milk 

  • 1 cup rolled oats 

  • ½ teaspoon vanilla extract 

  • ⅓ cup vegetable oil 

  • 1 teaspoon baking soda 

  • ½ cup white sugar 

  • ½ teaspoon salt ​

  • 1 ½ cups unbleached all-purpose flour 


Yield: 12 servings ​

Directions:

  1. Combine oats, baking powder, soda, salt and sugar.

  2. Beat egg lightly in large bowl and stir in oil, milk and vanilla. Add mashed banana and combine thoroughly and add the flour mixture.

  3. Put muffin batter into 12 cups of tin paper bake cups.

  4. Bake at 400 degrees Fahrenheit (205 degrees Celsius) for 18-20 minutes.

  5. Let stand before serving, and serve either warm or cold.


Tip: serve with fruit salad for maximum taste. ​
